Looking for a cold, comforting drink for those hot days? Look no further than Guarulo, a classic from the eastern plains of Colombia. This recipe from Juan Valdez teaches you how to easily prepare this light coffee, flavored with cinnamon and sweetened with panela; with an optional touch of liquor, it becomes the perfect escape for the end of the day

Measure a portion of pancake mix into a small well and place in a bowl.

Take a tall glass and place the fruit juliennes in the bottom.

Fill 3⁄4 parts of the glass with ice.

Add a spoonful of freeze-dried coffee or 2 oz of espresso (60ml).

Add the orange or tangerine juice, filling the glass up to 2 cm before the rim.

Take a whole cinnamon stick and mix the inside of the glass.

Add 1 ounce of liqueur to taste, mix and enjoy.

Note: At the end, the fruit can be eaten with a spoon.
